Marinating the Beef

In a large bowl, combine the beef cubes with soy sauce, lemon juice, garlic, and black pepper.

Mix well so the beef is thoroughly coated.

Cover and refrigerate for at least 1 hour, or ideally overnight.

Preparing the Vegetables

Peel and cube the potatoes; slice the carrots, red, and green bell peppers.

Ensure all your vegetables are cut uniformly for even cooking.

Set the vegetables aside to be added to the stew later.

To avoid bitterness, soak the olives in water for about 15 minutes before using.
