Pancit Malabon is a well-loved Filipino noodle dish distinguished by its thick rice noodles and vibrant, seafood-infused sauce. Traditionally topped with shrimp, pork, and a medley of fresh garnishes, it brings together flavors that are both bold and comforting.

Ingredients

Main Ingredients

400g rice noodles
soaked
200g shrimp
peeled and deveined
150g pork belly
sliced thin
3 hard-boiled eggs
sliced

Sauce

2 cups shrimp stock
made from shrimp shells
2 tsp annatto powder
atsuete powder
4 cloves garlic
minced
1 onion
diced
3 tbsp fish sauce
1 tbsp ground pepper
1 cup evaporated milk

Garnishing

1/2 cup chicharrón
crumbled
2 tbsp spring onions
chopped
2 tbsp lemon slices or calamansi
1/4 cup fried garlic

Making the Shrimp Stock

Boil shrimp shells

Boil shrimp shells in 3 cups of water for 10-15 minutes.

Strain stock

Strain and set aside 2 cups for the sauce.

Marinating the Pork

Mix pork with seasoning

Mix pork slices with 1 tbsp fish sauce and a pinch of ground pepper.

Marinate

Let it marinate for at least 15 minutes.

Sauté pork

Sauté the marinated pork until crispy and set aside.

Cooking Process

Cook Noodles

Blanch soaked noodles in boiling water until tender; drain and set aside.

Prepare Sauce

In a pan, sauté garlic and onions until fragrant, add annatto powder and fish sauce, then pour in the shrimp stock and evaporated milk. Let it simmer until slightly thickened.

Combine and Finish

Combine noodles with the sauce, stirring gently until well-coated. Add shrimp and stir until cooked.

Do not overcook the shrimp — it should be just opaque in the center.
