For the Oxtail

2 lbs oxtail
Cut into 1-inch slices
Salt
1 tsp
Water
Enough to cover the oxtail

For the Peanut Sauce

Peanut butter
1 cup, unsweetened
Chicken broth
1 cup
Fish sauce
1 tbsp
Brown sugar
1 tbsp

For the Vegetables

String beans
1 bunch, trimmed
Banana heart
1, thinly sliced
Eggplant
1 large, cubed
Bok choy
1 cup, leaves separated

For Thickening

Annatto oil
3 tbsp
Ground rice
1/4 cup, toasted
Salt and pepper

Marinating the Oxtail

Rinse and Dry

Rinse the oxtail pieces under cold water and pat dry.

Salt and Rest

Rub the oxtail with salt and rest for 20 minutes.

Boil and Skim

Place oxtail in a large pot, cover with water, and bring to a boil. Skim off any scum.

Preparing the Peanut Sauce

Combine Ingredients

In a separate saucepan, combine peanut butter, chicken broth, fish sauce, and brown sugar.

Cook Until Smooth

Stir continuously over low heat until smooth and creamy.

Cooking Process

Once boiling, reduce heat to a simmer and cook for 2 hours until oxtail is tender.

Simmer on medium-low heat for 2 hours.

Add string beans, banana heart, and eggplant to the pot with the oxtail. Cook for an additional 30 minutes.

Cook on medium heat for 30 minutes.
