1 teaspoon ground coriander

Date and Olive Relish

1 cup pitted dates
chopped
1/2 cup green olives
chopped
1 small red onion
finely diced
2 tablespoons fresh lemon juice
2 tablespoons fresh parsley

Marinating the Chicken

In a large bowl, mix olive oil with cumin, coriander, cinnamon, paprika, salt, and pepper.

Coat the chicken thighs in the spice mixture.
