Preparation
Marinating the Lamb
Combine Marinade Ingredients
In a large bowl, combine rose harissa paste, olive oil, lemon juice, ground cumin, coriander, salt, and pepper.
Coat the Lamb
Add the lamb cubes, mixing well to coat each piece.
Refrigerate
Cover and refrigerate for at least 1 hour, allowing the flavors to meld.
Preparing the Glaze
Mix Ingredients
In a small saucepan, mix pomegranate juice, honey, balsamic vinegar, and a pinch of salt.
Simmer
Bring to a simmer over medium heat, reducing until thickened and syrup-like.
Do not over-reduce the pomegranate glaze, as it can become too sticky.
Set Aside
Remove from heat and set aside.
To bring out the flavors, let the glaze cool slightly before using.
Cooking Process
Grilling the Skewers
Thread marinated lamb, onion, bell pepper, and zucchini onto skewers. Grill until lamb is cooked through.
