Preparation

Marinating the Chicken

1

Combine spices

Combine cumin, coriander, cinnamon, paprika, ginger, salt, and pepper in a small bowl.

2

Add oil and lemon

Add olive oil and lemon juice, mixing well to form a marinade.

3

Coat and chill

Coat chicken pieces with the marinade, cover, and refrigerate for at least 1 hour.

Preparing the Tagine Base

1

Heat oil

In a large tagine or Dutch oven, heat olive oil over medium heat.

Use a traditional tagine pot for authentic flavor and presentation.

2

Sauté onions and garlic

Add onions and garlic, sautéing until softened.

Be careful not to burn the garlic, as it can become bitter.

3

Add broth

Stir in chicken broth, bringing it to a simmer.

Cooking Process

1

Browning the Chicken

Sear marinated chicken pieces in the pot until golden brown on all sides.

2

Simmering the Tagine

Return onions and garlic to the pot, add olives and apricots, then lower the heat and simmer covered for 1.5 hours.

3

Finishing Touches

Uncover the pot, allowing the sauce to thicken slightly while stirring occasionally.
