Ingredients

Lamb Marinade

Lamb shoulder, cut into small cubes

Olive oil
2 tbsp
Ground cinnamon

Ground cloves
1 tsp
Ground cumin
1 tsp
Salt and pepper

Soup Base

Olive oil
3 tbsp
Onion, finely chopped
1 large
Garlic, minced
3 cloves
Carrots, diced
2 medium
Celery, diced
3 sticks
Chopped tomatoes
1 can (400g)
Tomato paste
1 tbsp

Spice Mix

Ground ginger
1 tsp
Paprika
1 tsp
Saffron threads
1 pinch

Dried chickpeas, soaked overnight and drained

Marinating the Lamb

In a bowl, combine olive oil, ground cinnamon, ground cloves, ground cumin, salt, and pepper.

Coat Lamb

Add the lamb cubes and coat well with the marinade.

Cover and refrigerate for at least 2 hours, preferably overnight.

Preparing the Soup Base

Heat olive oil in a large pot over medium heat.

Add onions, garlic, carrots, and celery; sauté until softened.
