Preparation
Marinating the Black Cod
Mix Miso Glaze
In a bowl, combine white miso paste, sake, mirin, and sugar, and mix until smooth.
Season Cod
Pat the black cod fillets dry with a paper towel and lightly season with salt.
Marinate Fillets
Coat the fillets thoroughly with the miso glaze, cover, and refrigerate for at least 1 hour (preferably overnight).
For best results, marinate the fish overnight to deeply infuse the flavors.
Preparing the Pickled Radish
Heat Pickling Liquid
Combine rice vinegar, sugar, salt, and water in a small saucepan, and heat until sugar dissolves.
Pickle Radishes
Pour the mixture over the sliced radishes and let them pickle for at least 30 minutes.
Chill
Store in the refrigerator until ready to serve.
Use a mandoline slicer for uniformly thin radish slices.
Cooking Process

Heat a nonstick pan over medium-high heat and sear the cod fillets for 2-3 minutes until caramelized.
