Pupusas are a popular Salvadoran dish, but this version incorporates Mexican chorizo and cheese, served alongside a refreshing curtido slaw for an unbeatable flavor combination.

Ingredients

For the Pupusas

2 cups masa harina
1 ⅓ cups warm water
1 cup cooked Mexican chorizo, crumbled
1 cup shredded mozzarella cheese
1 cup shredded Oaxaca cheese
½ teaspoon salt

For the Curtido

1 small head of cabbage, finely shredded
1 medium carrot, grated
¼ cup red onion, finely sliced
1 cup boiling water
½ cup apple cider vinegar
1 teaspoon sugar
½ teaspoon oregano
½ teaspoon salt

For the Sizzling

2 tablespoons vegetable oil (for cooking)

Preparing the Curtido

Steep Vegetables

Place the cabbage, carrot, and red onion in a large bowl and pour the boiling water over them. Let steep for about 5 minutes.

Drain and Season

Drain the water, then add the apple cider vinegar, sugar, oregano, and salt. Mix well.

Marinate

Set aside to marinate for at least 1 hour before serving.

Preparing the Pupusa Dough

Mix Dough

In a mixing bowl, combine the masa harina and salt. Gradually add the warm water and knead until a smooth dough forms.

Keep your hands lightly oiled to prevent sticking.

Rest Dough

Let the dough rest for 10 minutes.

Portion Dough

Divide the dough into 12 equal portions and roll each into a ball.

Cooking Process

Filling the Pupusas

Flatten a dough ball in your palm, add chorizo and cheese, seal and reshape into a disk.

Use a mixture of mozzarella and Oaxaca cheese for the perfect melt.

Cooking the Pupusas

Heat oil in a skillet over medium-high heat and cook each pupusa for 3-4 minutes per side until lightly browned and crisp.

Allow the curtido to rest in the refrigerator for enhanced flavors before serving.
