1 zucchini
sliced into rounds
1 red bell pepper
cut into strips
1 red onion
sliced

Salt and pepper

For the Dressing

3 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
½ teaspoon garlic powder
Salt and pepper
to taste

¼ cup crumbled feta cheese
2 tablespoons chopped parsley
