Ingredients

For the Chicken

1.5 lbs (700g) chicken
bone-in, skinless, cut into large pieces
2 tbsp olive oil
1 tsp ground cumin
1 tsp ground coriander
1 tsp salt
1/2 tsp black pepper

For the Wheat

2 cups harees wheat
soaked overnight
8 cups water
1 tsp salt

For the Garnish

1/4 cup ghee
1 onion
thinly sliced
1/2 tsp cinnamon

For Serving

Fresh coriander
chopped
Lemon wedges

Marinating the Chicken

Combine Marinade

In a large bowl, combine olive oil, cumin, coriander, salt, and pepper.

Coat Chicken

Add chicken pieces and coat evenly.

Cover and refrigerate for at least 2 hours, ideally overnight.

Preparing the Wheat

Drain Wheat

Drain the soaked harees wheat.

Cook Wheat

In a large pot, combine the wheat with water and salt.

Simmer Wheat

Simmer over medium heat for 1 hour, stirring occasionally until soft.

Ensure the wheat is fully cooked before combining with chicken. Use a thick-bottomed pot to prevent sticking.
