Ingredients

For the Fish Stock

500 g fresh tuna, roughly chopped
1.5 liters water
1 onion, peeled and quartered
5 garlic cloves, smashed
1-inch piece fresh ginger, sliced
2 fresh curry leaves

For the Coconut-Lime Blend

200 ml coconut milk
Zest and juice of 2 limes
1 green chili, finely chopped
1 tbsp fish sauce

For Seasoning

Salt, to taste
Freshly ground black pepper, to taste

For Garnish

Fresh cilantro leaves

Marinating the Fish

Rinse the tuna

Rinse the tuna pieces under cold water.

Salt rest

Place in a bowl, add a pinch of salt, and set aside for a few minutes.

Pat dry with paper towels before using.

Preparing the Coconut-Lime Blend

In a small bowl, combine the coconut milk, lime zest, lime juice, green chili, and fish sauce.

Strain the broth through a fine sieve, discarding solids.

Return the strained broth to the pot, add the coconut-lime blend, and adjust seasonings with salt and pepper. Warm through but do not boil.
