Ingredients

For the Seafood Medley

500g fresh fish fillets (cod or haddock), cut into chunks
250g raw mussels, cleaned and debearded
250g raw shrimp, peeled and deveined

For the Stew Base

2 tablespoons olive oil
1 large onion, sliced
2 cloves garlic, minced
1 red bell pepper, thinly sliced
2 medium tomatoes, chopped
3 medium potatoes, peeled and sliced
4 cups fish stock or water
1 teaspoon paprika
Salt and pepper to taste

For the Seasoning

1 lemon, zest and juice
1 bay leaf
3 tablespoons fresh parsley, chopped
1 teaspoon dried oregano

Marinating the Seafood

Toss fish with seasoning

In a bowl, toss the fish fillets with salt, pepper, and half of the lemon juice.

Marinate

Set aside in the refrigerator to marinate for 15 minutes.

Preparing the Stew Base

Heat oil and sauté onions

Heat olive oil in a large pot over medium heat.

Ensure mussels are tightly closed before cooking; discard any open ones.

Add sliced onions and sauté until translucent.

Cook peppers and tomatoes

Stir in garlic, bell pepper, and tomatoes; cook for about 5 minutes.

Prepare all vegetables and marinate seafood ahead of time to streamline the cooking process.

Add potatoes, fish stock, paprika, bay leaf, salt, and pepper to the pot; bring to a simmer.

Stew Base Simmering: 30 minutes. Use medium heat.

Add shrimp, mussels, remaining lemon juice, zest, and oregano. Cook until mussels open and shrimp turns pink.
