Ingredients

For the Abalone

4 fresh abalones
cleaned and sliced thinly
1 tablespoon sesame oil

For the Porridge

1 cup short-grain rice
rinsed and soaked for 30 minutes
6 cups water or abalone broth
2 tablespoons sesame oil
1 tablespoon soy sauce
Salt
to taste

For the Garnish

2 sheets dried seaweed (gim)
crumbled
2 scallions
finely chopped

Marinating the Abalone

Rinse the abalone

Rinse abalone under cold water to remove excess salt and dirt.

Ensure abalone is properly cleaned to avoid gritty texture.

Slice the abalone

Thinly slice the abalone.

Marinate with sesame oil

Marinate with 1 tablespoon sesame oil for 10 minutes.

Preparing the Rice

Rinse the rice

Rinse the rice until the water runs clear.

Use an extra fine mesh strainer for rinsing rice to prevent loss.

Soak the rice

Soak the rice in cold water for at least 30 minutes.

Drain the rice

Drain and set aside.

Cooking Process

Sautéing the Abalone

In a large pot, heat sesame oil and briefly sauté the abalone slices until just opaque. Remove and set aside.

Cook for 3 minutes on medium-high heat.

Cooking the Porridge

Add the soaked rice to the pot with the sesame oil, stir for 2 minutes, then add water or abalone broth.

Simmering

Bring to a boil, then lower the heat and simmer, stirring frequently, until the rice is broken down and creamy (about 40 minutes).
