For the Broth

Vegetable oil
1 tablespoon
Onion, chopped
1 onion
Garlic cloves, minced
4 cloves
Ginger, sliced
1-inch piece
Chicken or vegetable stock
8 cups
Lemongrass, bruised
2 stalks
Fish sauce
2 tablespoons
Tamarind paste
2 tablespoons
Sugar
1 teaspoon
Salt
To taste

For the Noodles

Rice noodles, soaked until pliable
200g
Water for boiling noodles

For the Protein

Chicken breast or tofu, sliced thinly
300g
Soy sauce
1 tablespoon
Oyster sauce
1 tablespoon

For the Garnish

Lime wedges
1 lime
Fresh cilantro leaves
Bean sprouts
Sliced red chili

Preparation


Marinating the Protein

Combine Sauces

Combine soy sauce and oyster sauce in a bowl.

Add sliced chicken or tofu and marinate for at least 15 minutes.
