Fine bulgur wheat

Filling

Ground beef or lamb
1 lb
Onion, finely chopped
1 large
Pine nuts
1/2 cup
Ground cinnamon
1 teaspoon
Ground allspice
1 teaspoon
Salt and pepper
to taste
Olive oil
2 tablespoons

Tahini Sauce

Tahini
1/2 cup
Lemon juice
1/4 cup
Garlic, minced
2 cloves
Water
to thin as necessary
Salt
to taste

Topping

Olive oil
for brushing

Preparation


Preparing the Kibbeh Shell

Soak bulgur

Soak the bulgur in cold water for 30 minutes, then drain well.

Combine ingredients

Combine the bulgur with ground beef, grated onion, cumin, allspice, salt, and pepper.

Knead mixture

Knead the mixture into a smooth dough-like consistency, adding cold water if necessary.

Preparing the Filling

Heat oil and sauté onions

Heat olive oil in a skillet over medium heat. Add onions and sauté until golden.

Cook meat and spices

Stir in ground meat, allspice, cinnamon, salt, and pepper, cooking until brown.

Add pine nuts

Add pine nuts and sauté for another 2 minutes.

Ensure the filling is completely cooled before using.

Cooking Process

Layer base

Press half of the bulgur mixture into an oiled baking dish to form the base.

Add filling

Spread the meat filling evenly over the base layer.

Top kibbeh

Cover the filling with the remaining bulgur mixture.

Bake

Preheat oven to 375°F (190°C). Bake for 45 minutes.

Assembly takes 15 minutes.
