Sesame-Crusted Tuna

Tuna steaks
4 steaks, 6 oz each
White sesame seeds
1 cup
Black sesame seeds
1/2 cup
Flour
2 tbsp
Salt and pepper
to taste
Sesame oil
2 tbsp

Ponzu Sauce

Soy sauce
1/3 cup
Fresh lemon juice
1/4 cup
Mirin
2 tbsp
Rice vinegar
1 tbsp
Dashi granules
1/2 tsp (or dash of fish sauce)

Garnishing

Green onions
2 tbsp, finely chopped
Toasted sesame seeds
1 tbsp

Pickled ginger slices

Preparation


Marinating the Tuna

Season Tuna

Season the tuna steaks with salt and pepper on both sides.

Dust with Flour

Lightly dust each steak with flour to help the sesame seeds adhere.

Coat with Sesame Seeds

Mix white and black sesame seeds on a plate. Press each tuna steak into the seeds to coat thoroughly.

Preparing the Ponzu Sauce

Combine Ingredients

In a small bowl, combine soy sauce, lemon juice, mirin, rice vinegar, and dashi granules.

Stir until the dashi is completely dissolved.

Set aside to let the flavors meld.

Cooking Process

Heat sesame oil in a frying pan over high heat and sear each sesame-coated tuna steak for 1-2 minutes per side, ensuring the inside remains rare.

Ensure your frying pan is very hot before adding the tuna to prevent sticking.

Remove from the pan and let it rest for 5 minutes before slicing thinly.

Chill the tuna in the freezer for 10 minutes for easier slicing after searing.
