Chef’s Tip:

Preparation

Preparing the Batter

1

Combine ingredients

In a mixing bowl, combine flour, water, eggs, and dashi powder if using. Whisk until smooth.

2

Add vegetables

Add shredded cabbage, green onions, and carrots to the batter. Mix well to ensure all ingredients are evenly coated.

Ensure the batter is not too runny — it should be thick enough to hold the filling together. Refrigerating the batter for 15 minutes helps it thicken and improves the texture.

Preparing the Fillings

1

Cook shrimp

If using shrimp, cook briefly in a pan until pink. Set aside.

2

Prep bacon

Cut bacon strips in half for easier handling during cooking.

3

Set aside fillings

Set aside cooked shrimp or pork belly for later use.

Cooking Process

1

Heat skillet

Heat a large skillet over medium heat and lightly oil it.

2

Form pancakes

Pour batter into the skillet, forming a circular pancake. Add a strip of bacon on top of each one.

3

Cook and flip

Cook for 4 minutes on one side, then flip carefully. Cover and cook for another 5 minutes to steam cook.

Use medium heat for initial cooking and medium-low heat when finishing.

Never leave hot oil unattended. Keep a lid nearby …
