For the Carrots

1 lb (450g) small carrots
peeled and trimmed
2 tbsp olive oil
Salt
to taste
Pepper
freshly ground to taste

For the Matcha Miso Glaze

1 tbsp white miso paste
1 tsp matcha powder
sifted
2 tbsp honey
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp water
1 tsp sesame oil

For the Garnish

1 tbsp white sesame seeds
toasted
1 tbsp black sesame seeds
2 tbsp fresh cilantro
roughly chopped

Preparing the Carrots

Preheat Oven

Preheat your oven to 400°F (200°C).

Season Carrots

Toss the peeled carrots in olive oil, salt, and pepper until evenly coated.

Arrange Carrots

Spread the carrots on a baking sheet lined with parchment paper.

Creating the Matcha Miso Glaze

Whisk Ingredients

In a small bowl, whisk together the white miso paste, sifted matcha powder, honey, soy sauce, rice vinegar, water, and sesame oil.

Adjust Seasoning

Adjust seasoning with additional salt if necessary, keeping in mind the glaze will intensify when cooked.

Ensure the matcha powder is thoroughly sifted to avoid clumps in the glaze. The glaze can be prepared ahead of time and stored in the fridge for up to a week.

Cooking Process

Roast the carrots in the preheated oven for 30-35 minutes or until they are tender and slightly caramelized.
