Glutinous rice flour
1 cup
Water
3/4 cup
Sugar
1/4 cup
Matcha green tea powder
2 tsp, sifted

For the Red Bean Filling

Sweet red bean paste (anko)
1 cup
Powdered sugar
1/4 cup

For the Dusting

Cornstarch or potato starch
1/2 cup

Preparing the Red Bean Filling

Combine Ingredients

Mix the sweet red bean paste with powdered sugar until well combined.

Portion the Filling

Divide the paste into 12 equal portions and roll them into balls.

Place on a baking sheet lined with parchment paper and refrigerate.

Preparing the Mochi Dough

Mix Ingredients

Whisk together glutinous rice flour, water, sugar, and sifted matcha powder until smooth.

Sift the matcha powder to ensure a smooth and vibrant green mochi dough.

First Microwave

Cover the bowl with plastic wrap, leaving a small opening for steam, and microwave on high for 2 minutes.

Be careful when handling hot mochi dough to avoid burns.

Second Microwave

Stir the dough, re-cover, and microwave for another minute until it becomes translucent.

Cooking Process

Shaping the Mochi

Allow the dough to cool slightly, then dust a work surface with starch and knead the dough lightly.

Filling the Mochi

Flatten each portion of dough into a disc, then place a red bean filling ball in the center. Gently wrap the dough around the filling, pinching edges to seal.

Roll each mochi ball in the extra starch to prevent sticking.
