Ingredients

Saltfish

1 lb dried saltfish
Water for soaking

Callaloo Mixture

1 tbsp vegetable oil
1 large onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped
1 Scotch bonnet pepper, seeded and minced
4 cups fresh callaloo or spinach, washed and chopped
1 tomato, chopped

Seasoning & Aromatics

1/2 tsp thyme leaves
1/2 tsp black pepper
1/4 tsp all-purpose seasoning

For Serving

1 tbsp butter
Juice of 1 lime

Marinating the Saltfish

Rinse the Saltfish

Rinse the saltfish under cold running water.

Soak the Saltfish

Place in a large bowl and cover with water. Soak overnight.

Soak the saltfish overnight to reduce salinity and enhance flavor.

Boil and Shred

Drain and rinse again. Boil in fresh water for about 20 minutes. Drain and shred.

Preparing the Callaloo Mixture

Heat the Oil

Heat oil in a large skillet over medium heat.

Sauté Vegetables

Sauté onion, garlic, and bell pepper until soft.

Add Scotch Bonnet Pepper

Add Scotch bonnet pepper and sauté for an additional minute.

Use gloves when handling Scotch bonnet peppers to avoid skin irritation. Fresh callaloo can be replaced with spinach or Swiss chard if unavailable.

Add shredded saltfish to the sautéed vegetables and stir well.

Cooking the Callaloo

Mix in callaloo, tomato, thyme, black pepper, and all-purpose seasoning.

Cover and cook on low heat for 10-15 minutes until greens are tender.
