Preparing the Rye Bread Ice Cream Base
Heat and Combine
In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat until the sugar dissolves.
Infuse with Rye Bread
Stir in the toasted rye bread crumbs and let the mixture infuse for 10 minutes.
Temper the Yolks and Thicken
In a separate bowl, whisk the egg yolks. Slowly pour the warm cream mixture over the yolks, whisking constantly. Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened. Strain into a bowl, stir in vanilla extract, and chill completely.
Making the Caramel Swirl
Caramelize the Sugar
In a clean saucepan, combine the sugar and water. Cook over medium heat without stirring until it turns a deep amber color.
Finish the Caramel
Remove from heat and carefully add the heavy cream, whisking constantly until smooth. Stir in butter and sea salt. Let cool completely.
Cooking Process
Churn the Ice Cream
Pour chilled base into an ice cream maker and churn as per the manufacturer's instructions.
Layer with Caramel
During the last few minutes of churning, drizzle in half of the caramel to create swirls.
Freeze Until Firm
Transfer ice cream to an airtight container, fold in the remaining caramel, and freeze until firm.
