In a small bowl, combine the chopped dill, parsley, and lemon zest. Set aside to let the flavors meld.
Prepare the garnish
Crumble the feta cheese and prepare lemon wedges for garnish.
Cooking the Rice and Spinach
Heat the olive oil
Heat the olive oil in a large saucepan over medium heat.
Sauté the onion
Add the diced onion and sauté until translucent, about 5 minutes.
Cook the garlic
Stir in the garlic and cook for another minute.

Simmering
Add rice and vegetable broth, bring to a boil, then reduce heat to low, cover, and simmer for 15-17 minutes until rice is tender.
