Ingredients

For the Misir Wot

1 cup red lentils
rinsed and drained
2 tablespoons olive oil
1 large onion
finely chopped
3 cloves garlic
minced
1 tablespoon Berbere spice mix
adjust to taste
2 tablespoons tomato paste
3 cups vegetable broth
Salt
to taste

For the Injera

1 cup Teff flour
1 cup all-purpose flour
1 1/2 cups water
warm
1/2 teaspoon salt
1 tablespoon active dry yeast

For the Herbed Dressing

1/4 cup cilantro
chopped
1/4 cup parsley
chopped
1/2 lemon
juiced
2 tablespoons olive oil
Salt and pepper
to taste

Marinating the Injera Batter

Combine Dry Ingredients

In a large bowl, combine Teff flour, all-purpose flour, salt, and yeast.

Add Water

Slowly add warm water and mix until smooth.

Fermentation

Cover and let it ferment overnight or at least 8 hours.

Preparing the Misir Wot

In a large pot, heat olive oil and sauté onions until translucent.

Use a heavy-bottomed pan for even cooking of lentils.

Add garlic and Berbere, stirring until fragrant.

Stir in tomato paste and cook for 2 minutes before adding lentils and broth.

Cooking Process

Cook on low heat for 35-40 minutes, stirring frequently.

Pour batter in a heated non-stick pan and cook until holes form on the surface. No need to flip.
