500g boneless lamb leg
cut into cubes
Olive Oil
3 tbsp
Lemon Juice
Juice of 1 lemon
Lemon Zest
Zest of 1 lemon

Fresh Mint
2 tbsp chopped
Dried Oregano

Red Onion
1, cut into wedges
Red Bell Pepper
1, cut into chunks
Green Bell Pepper

Marinating the Lamb

Combine Marinade Ingredients

In a large bowl, combine olive oil, lemon juice, lemon zest, minced garlic, chopped rosemary, chopped mint, dried oregano, salt, and pepper.

Add the lamb cubes to the bowl and toss to coat thoroughly in the marinade.
