Chef’s Tip:

Preparation

Preparing the Cheese Mix

1

Grate and toss

Grate the Gruyère and Emmental cheese, and toss with cornstarch.

2

Season the pot

Rub the inside of a fondue pot with the halved garlic clove, then discard the garlic.

3

Heat the wine

Over medium-low heat, add the wine and slowly bring to a simmer.

Keep the wine at a gentle simmer to avoid burning the cheese.

Preparing the Dipping Accompaniments

1

Cube the bread

Cut the baguette into cubes and set aside.

2

Slice the apples

Slice the apples just before serving to prevent browning.

Squeeze lemon over apple slices to prevent oxidation and browning.

3

Blanch vegetables

Blanch the seasonal vegetables until just tender.

Cooking Process

1

Melting the Cheese

Gradually add cheese to the fondue pot, stirring consistently.

2

Adding Flavor

Once melted, stir in kirsch, pepper, and nutmeg for flavor enhancement.

3

Final Touch

Adjust the thickness by adding more wine, if necessary.

Never leave hot oil unattended. Keep a lid nearby …
