1 large onion
finely chopped
2 carrots
diced
2 celery stalks
diced
2 cloves garlic
minced

For the Lentils

1 1/2 cups brown lentils
rinsed and sorted
6 cups vegetable or chicken broth
2 bay leaves

For the Additions

4 frankfurters
sliced
2 tablespoons Dijon mustard
1 teaspoon dried thyme

For Seasoning & Garnish

Salt and pepper
to taste
2 tablespoons chopped fresh parsley

Preparing the Soup Base
