Preparing the Bannock Dough
Combine dry ingredients
In a large bowl, whisk together the flour, baking powder, sugar, and salt.
Cut in the butter
Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Chill the butter in the freezer for 10 minutes to make it easier to work into the flour.
Add milk
Gradually stir in the milk until a soft dough forms. Do not over-mix.
Preparing the Berry Topping
Combine berries, sugar, and zest
Combine berries, sugar, and lemon zest in a bowl.
Coat the berries
Stir gently to coat the berries evenly with sugar.
Macerate the berries
Allow to macerate for 10 minutes.
Do not mash the berries; they should remain whole for texture.
Cooking Process
Bake the bannock
Preheat your oven to 375°F (190°C). Turn the dough onto a floured surface and shape it into a 1-inch thick round. Place on a parchment-lined baking sheet and bake for 25 minutes or until golden brown.
Prepare the maple glaze
In a small saucepan, melt the butter over low heat, then stir in the maple syrup until warm.
Brush with maple glaze
Once baked, remove the bannock from the oven and brush generously with the warm maple glaze.
