For the Bulgogi Marinade

Beef sirloin
1 lb, thinly sliced
Soy sauce
3 tbsp
Sugar
2 tbsp
Sesame oil
1 tbsp
Garlic
3 cloves, minced
Onion
1 small, grated
Fresh ginger
½ tsp, minced
Sesame seeds
1 tbsp

For the Quesadilla

Flour tortillas
4 large
Kimchi
1 cup, chopped
Mozzarella cheese
2 cups, shredded
Olive oil
1 tbsp

For the Spicy Salsa

Tomatoes
2, diced
Red onion
1 small, finely chopped
Jalapeño
1, diced
Cilantro
1 bunch, chopped
Lime juice
Juice of 1 lime
Salt
To taste

Marinating the Bulgogi

Combine marinade ingredients

In a medium bowl, combine soy sauce, sugar, sesame oil, minced garlic, grated onion, minced ginger, and sesame seeds.

Ensure beef is thinly sliced to cook evenly and quickly.

Add sliced beef

Add the sliced beef to the marinade, ensuring each piece is coated.

Marinate beef

Cover and refrigerate for at least 1 hour, ideally overnight for deeper flavors.

For best flavor, allow the bulgogi to marinate overnight.

Preparing the Spicy Salsa

Combine salsa ingredients

In a mixing bowl, combine diced tomatoes, chopped red onion, jalapeño, and cilantro.

Add lime juice and salt, mix well, and let sit for at least 30 minutes to blend flavors.

Cooking Process

Grill Bulgogi

Heat a grill pan over medium-high heat, add marinated beef slices, and cook until done.

Timing: 10 min. Heat: Medium-high heat.

Assemble Quesadilla

Place a tortilla in a clean pan, spread cheese, add cooked bulgogi and kimchi, top with more cheese, and another tortilla.

For a smoky flavor, grill your tortillas briefly before assembling.
