Chef’s Tip:

Preparation

Marinating the Beef

1

Coat beef

In a large bowl, coat the beef cubes with olive oil.

2

Season beef

Season generously with salt, pepper, and the ground cinnamon.

3

Marinate

Let marinate for 30 minutes to an hour in the fridge.

Preparing the Sauce Base

1

Heat oil

Heat olive oil in a large pot over medium heat.

2

Cook onions

Add chopped onions and cook until translucent.

3

Add garlic

Stir in the minced garlic, cooking for another minute until fragrant.

⚠️ Avoid burning the garlic to prevent a bitter taste. 💡 Use a high-quality red wine to enhance the sauce's depth.

Cooking Process

1

Browning the Beef

Sear beef cubes in batches until browned on all sides; set aside.

2

Building the Sauce

Add tomato paste to the onion-garlic mix and cook for 2 minutes. Deglaze with red wine, ensuring to scrape any fond from the bottom.

3

Simmering the Stew

Return beef to the pot, add tomato puree, beef stock, bay leaves, cinnamon stick, allspice, sugar, and oregano. Bring to a boil, then reduce to simmer.

Never leave hot oil unattended. Keep a lid nearby …
