Ingredients

For the Curry Base

2 tablespoons vegetable oil
1 large onion, finely chopped
3 cloves garlic, minced

For the Curry Paste

3 tablespoons Thai red curry paste
1 teaspoon ground turmeric
1 teaspoon coriander powder

For the Tofu & Pineapple

400g (14 oz) firm tofu, pressed and cubed
1 cup fresh pineapple chunks

For the Coconut Curry

1 can (400 ml) coconut milk
1 tablespoon soy sauce
1 tablespoon maple syrup

For Garnishing

4 kaffir lime leaves, finely sliced
Fresh cilantro, chopped

Preparing the Curry Base

Heat Oil

Heat vegetable oil in a large pan over medium heat.

Sauté Onion

Sauté the onion until translucent, about 5 minutes.

Add Garlic

Add garlic and cook for an additional minute.

Do not let the garlic burn as it can turn bitter.

Making the Curry Paste

Combine Spices

In a small bowl, combine red curry paste, turmeric, and coriander powder.

Mix well to create an aromatic paste.

Add to the pan and cook until fragrant, 2-3 minutes.
