Traditional Gambian Stew

Ingredients

For the Beef Marinade

Beef chuck
2 lbs — cut into 1-inch cubes
Garlic
2 cloves — minced
Ginger
1-inch piece — grated
Salt
1 tsp
Black pepper
1/2 tsp

For the Peanut Sauce

Natural peanut butter
1 cup
Onion
1 medium — finely chopped
Tomato paste
2 tbsp
Beef broth
2 cups
Diced tomatoes
1 can (14 oz) — drained

For the Stew

Sweet potatoes
2 medium — peeled and cubed
Carrots
2 — peeled and sliced
Red bell pepper
1 — chopped
Vegetable oil
2 tbsp

For the Spice Blend

Cayenne pepper
1 tsp
Ground coriander
2 tsp
Smoked paprika
1 tsp

Marinating the Beef

Combine Beef and Marinade

In a large bowl, combine the beef with garlic, ginger, salt, and black pepper.

Cover and refrigerate for at least 1 hour, preferably overnight.

Remove from the refrigerator 30 minutes before cooking to bring to room temperature.

Preparing the Peanut Sauce

Mix Base Ingredients

In a mixing bowl, whisk together the peanut butter, tomato paste, and diced tomatoes.

Ensure the peanut butter is fully mixed; clumps can alter cooking time. Pro Tip: Roast peanuts lightly and blend them to elevate the sauce's nutty flavor.

Add Beef Broth

Gradually add the beef broth while whisking to maintain a smooth consistency.

Set aside until ready to use.

Cooking Process

Heat oil in a large pot over medium-high heat and sear the beef until browned on all sides.

Time: 10 min. Heat: High Heat.

Add onions to the pot, sautéing until translucent, then incorporate the spice blend.

Pour in the peanut sauce, add vegetables, stirring everything together. Reduce heat to low and cover to cook.
