Ingredients

For the Coconut Shrimp

16 large shrimp
peeled and deveined
1 cup coconut milk
1/2 cup panko breadcrumbs
1/2 cup shredded coconut
1 teaspoon lime zest
Salt and pepper to taste

For the Pineapple Rice

1 cup jasmine rice
2 cups fresh pineapple
diced
1/4 cup diced red bell pepper
1/4 cup chopped green onions
2 tablespoons chopped fresh cilantro
1 tablespoon soy sauce
1 tablespoon olive oil
Salt to taste

For the Sauce

1/4 cup sweet chili sauce
2 tablespoons lime juice
1 teaspoon soy sauce

Marinating the Shrimp

Combine marinade ingredients

In a mixing bowl, combine coconut milk, salt, and pepper.

Marinate the shrimp

Add the shrimp and let marinate in the refrigerator for at least 30 minutes.

Meanwhile, prepare the coating by mixing panko, shredded coconut, and lime zest in another bowl.

Preparing the Pineapple Rice

Rinse jasmine rice under cool water and drain.

In a medium saucepan, bring 2 cups of water to a boil, add rice, cover, and reduce heat. Simmer for 15 minutes.
