Marinating the Shrimp
Combine marinade ingredients
In a mixing bowl, combine coconut milk, salt, and pepper.
Marinate the shrimp
Add the shrimp and let marinate in the refrigerator for at least 30 minutes.
Prepare the coating
Meanwhile, prepare the coating by mixing panko, shredded coconut, and lime zest in another bowl.
Preparing the Pineapple Rice
Rinse and drain rice
Rinse jasmine rice under cool water and drain.
Cook the rice
In a medium saucepan, bring 2 cups of water to a boil, add rice, cover, and reduce heat. Simmer for 15 minutes.
Fluff and set aside
Fluff the rice with a fork and set aside.

Cooking the Shrimp Skewers
Thread coated shrimp onto skewers and grill or pan-fry over medium heat, about 2-3 minutes per side, until thoroughly cooked.
