For the Chicken and Broth

Whole chicken
3-4 lbs, cut into pieces
Chicken broth
8 cups
Onion
1 large, chopped
Garlic
3 cloves, minced
Salt and pepper
to taste

For the Vegetables

Green peas
1 cup
Carrots
2, diced
Potatoes
4 medium, peeled and cubed
Red bell pepper
1, diced

For the Cilantro Mixture

Cilantro
3 bunches, stems removed
Green chili
1 small, deseeded
Olive oil
1 tablespoon

For Garnishing

Lime wedges
Fresh cilantro leaves

Preparing the Chicken and Broth

Add chicken and broth

In a large pot, add the chicken pieces and cover with chicken broth.

Season with onion and garlic

Add chopped onion and minced garlic; season with salt and pepper.

Simmer the chicken

Bring to a simmer over medium heat. Cover and cook for 30 minutes.

Ensure the chicken is fully cooked and tender before adding the vegetables.

Preparing the Cilantro Mixture

Combine ingredients

In a blender, combine the cilantro leaves, green chili, and olive oil.

Blend until smooth

Blend until smooth, adding a little water if necessary.

Set aside mixture

Set aside this cilantro mixture for later.

Blanch the potatoes briefly to keep them firm in the soup.

Cooking Process

After the chicken has cooked, add the carrots, potatoes, and red bell pepper to the pot.
