Ingredients

For the Marinade

500g lamb shoulder
cubed
1 cup plain yogurt
1 tsp turmeric powder
1 tbsp ginger-garlic paste
Salt
to taste

For the Spice Blend

2 tbsp whole coriander seeds
1 tsp cumin seeds
1 tbsp fennel seeds
5 cardamom pods
1 cinnamon stick
2-inch piece
3 dried Kashmiri red chilies

For the Curry Base

3 tbsp ghee or oil
2 large onions
finely sliced
2 tomatoes
chopped
1 tsp red chili powder
1/2 tsp asafoetida
hing
1 cup water

For Finishing

1/2 cup fresh cream
Fresh coriander leaves
chopped
1 tsp garam masala

Marinating the Lamb

Combine Marinade Ingredients

In a bowl, mix the lamb cubes with yogurt, turmeric, ginger-garlic paste, and salt.

Refrigerate

Cover and refrigerate for at least 1 hour.

Allow the flavors to penetrate the meat for tenderness.

Preparing the Spice Blend

Dry Roast Spices

Dry roast coriander, cumin, fennel, cardamom, cinnamon, and chilies in a pan until aromatic.

Do not over-roast the spices as it can lead to a bitter taste. Pro Tip: Toast spices over medium-low heat to ensure even roasting.

Grind the roasted spices into a fine powder.
