Preparing the Taro Leaves
Soak Leaves
Soak the dried taro leaves in water overnight to soften.
Always soak dried taro leaves overnight to ensure they're tender and flavorful.
Drain Leaves
Drain and gently squeeze out excess water. Set aside.
Preparing the Pork Belly
Heat Oil
Heat vegetable oil in a pan over medium heat.
Fry Pork
Add pork belly slices and fry until golden brown.
Set Aside
Remove pork belly and set aside; keep the oil in the pan.
Cooking Process
Sautéing Aromatics
In the same pan with pork oil, sauté garlic, onion, and shrimp paste until fragrant.
Simmering Broth
Add coconut milk, coconut cream, and chicken stock. Stir well.
Combining & Final Simmer
Add the soaked taro leaves, cooked pork, fish sauce, and soy sauce. Simmer on low heat until leaves are fully tender.
