500g lamb or beef
cubed
2 tbsp plain yogurt
1 tbsp ginger-garlic paste
1 tsp turmeric powder
1 tsp red chili powder

For the Curry Base

3 tbsp mustard oil or vegetable oil
2 large onions
finely sliced
2 tomatoes
chopped
3 green chilies
slit
1 tbsp cumin powder
1 tbsp coriander powder
Salt
to taste

For the Spice Mix

1 tsp garam masala
1 tsp fennel seeds
2 cardamom pods
2 cloves
1 bay leaf

For the Garnish

2 stalks scallions
finely chopped
Handful fresh coriander leaves
chopped

Marinating the Meat

In a large bowl, combine the yogurt, ginger-garlic paste, turmeric, and red chili powder.
