For the Berbere Sauce

2 tbsp ground Berbere spice mix
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp freshly grated ginger
2 tbsp tomato paste

For the Firfir

4 large pieces of Injera
2 tbsp olive oil
1 bell pepper, chopped
1 cup tomatoes, diced

For the Garnish

1 bunch fresh cilantro, chopped
1 lemon, cut into wedges

Tear the Injera into bite-sized pieces.
