Preparation
Marinating the Tofu
Make the jerk marinade
In a bowl, whisk together soy sauce, olive oil, garlic, ginger, jerk seasoning, lime juice, and brown sugar.
Marinate the tofu
Place tofu cubes in a large zip-lock bag or container. Pour the marinade over the tofu, seal, and gently mix to coat.
Refrigerate
Refrigerate for at least 1 hour or overnight.
For optimal flavor, marinate the tofu overnight.
Preparing the Pineapple Salsa
Combine salsa ingredients
Combine pineapple, red onion, jalapeño, lime juice, and cilantro in a medium-sized bowl.
Season and chill
