4 inches galangal

10 green Thai bird chilies

6 cloves garlic

1 tablespoon shrimp paste
Zest of 1 lime
1 tablespoon fish sauce
1 small bunch fresh cilantro stems

Chicken Curry

2 tablespoons vegetable oil
800 g chicken thighs
cut into bite-sized pieces
1 medium eggplant
cubed
1 red bell pepper
sliced thinly
400 ml coconut milk
1 cup chicken stock
1 tablespoon brown sugar
1 cup Thai basil leaves

Rice

2 cups Jasmine rice
rinsed
4 cups water
1 teaspoon salt
