Garlic cloves

Ground cumin
1 teaspoon
Ground cinnamon
1 teaspoon
Ground coriander
½ teaspoon
Turmeric
½ teaspoon
Lamb or chicken
400 g, cut into chunks

Pitted dates
150 g, chopped
Blanched almonds
50 g
Honey
2 tablespoons
Chicken or vegetable broth
1 cup

For the Garnish

Sesame seeds — toasted
Fresh mint leaves

Marinating the Protein

Mix spices and oil

In a bowl, combine olive oil, cumin, cinnamon, coriander, and turmeric.

Coat the meat

Add lamb (or chicken) pieces and ensure they are fully coated.

Refrigerate to marinate

Cover and let marinate in the fridge for at least 1 hour.

Refrigerate overnight for a deeper flavor infusion if time allows.

Preparing the Dates & Almonds

Chop dates

Chop the pitted dates and set aside.

Toast almonds

Toast the almonds in a dry pan until golden brown.

Keep stirring almonds while toasting to prevent burning.

Combine fruits & nuts

Combine dates and almonds in a small bowl.

Cooking Process

Sauté marinated meat in olive oil over medium-high heat until browned.

Use medium-high heat for about 10 minutes.

Add onions and garlic, stirring until onions are soft and translucent.

Combine all ingredients in a tagine or heavy pot, then simmer slowly.

Simmer for 1 h 30 min on low heat.
