Preparing the Kadai Masala
Dry roast spices
Dry roast coriander seeds, cumin seeds, fennel seeds, and dried red chilies in a pan until aromatic.
Grind spices
Allow them to cool, then grind to a coarse powder using a spice grinder or mortar and pestle.
Preparing the Kadai Paneer
Heat oil and sauté paste
Heat oil in a kadai or large pan over medium heat. Add ginger-garlic paste and sauté for 1 minute until fragrant.
Avoid overcooking the spices to prevent bitterness.
Cook onions
Add chopped onions and cook until they turn golden brown.
