Suf Fitfit is a traditional Ethiopian dish made by combining pieces of Injera with spiced chickpeas, creating a vibrant and filling salad.

For the Injera

Injera bread
3 large pieces

Chickpea Mixture

Chickpeas
1 can, drained and rinsed
Olive oil
2 tbsp
Ground cumin
1 tsp
Ground coriander
1 tsp
Smoked paprika
1/2 tsp
Salt and pepper
To taste

Dressing

Lemon juice
3 tbsp, freshly squeezed
Tahini
1 tbsp
Garlic
1 clove, minced
Extra-virgin olive oil
1 tbsp
Salt
To taste

Salad Assembly

Red onion
1/2, thinly sliced
Green bell pepper
1, diced
Red bell pepper
1, diced
Parsley
1/4 cup, chopped
Cilantro
1/4 cup, chopped

Preparation


Preparing the Injera

Tear the injera

Tear the injera into small, bite-sized pieces.

Dry the injera

Spread the pieces on a baking sheet and set aside to slightly dry.

Preparing the Chickpeas

Heat olive oil

Heat olive oil in a skillet over medium heat.

Add chickpeas and spices

Add chickpeas and sprinkle with cumin, coriander, and smoked paprika.

For more flavor, toast the spices in the skillet for a minute before adding chickpeas.

Crisp the chickpeas

Cook for 5-7 minutes until chickpeas become slightly crispy. Remove from heat and season with salt and pepper.

Be careful not to overcook the chickpeas; they should remain slightly firm.
