4 — peeled and diced
Olive oil
2 tablespoons
Onion
1 large — finely chopped
Garlic
3 cloves — minced
Fresh ginger
1-inch piece — grated
Spices
1 tsp ground coriander, 1 tsp ground cumin, 1/2 tsp dried thyme, salt & pepper to taste

Diced tomatoes
1 can (14.5 oz)
Vegetable broth
2 cups
Tomato paste
2 tablespoons
Lemon juice
1 tablespoon, freshly squeezed

Paprika
1 teaspoon
Turmeric
1/2 teaspoon
Cayenne pepper
