1 lb lamb shoulder, cut into 1-inch cubes
2 tbsp olive oil
Sea salt and black pepper to taste

4 tbsp unsalted butter, softened
2 cloves garlic, minced
1 tbsp berbere spice
1 tsp ground coriander
1/2 tsp ground cumin

For the Rosemary Infusion

2 sprigs fresh rosemary
1 small onion, thinly sliced
1 small lime, juiced

For the Garnish

1 tbsp fresh parsley, chopped

Marinating the Lamb

In a bowl, combine lamb cubes, olive oil, sea salt, and black pepper.
