Lime juice
1 lime, juiced
Fresh cilantro
1/4 cup, chopped

Plain yogurt
1/2 cup (or vegan alternative)

Marinating the Lentils

Rinse and drain the red lentils under cold water until water runs clear.

Let the lentils marinate for at least 30 minutes while preparing other components.

Preparing the Teff Tortillas

In a large bowl, combine teff flour, all-purpose flour, and salt.

Gradually add water and olive oil, mixing until a smooth dough forms.

Sauté onions and garlic in olive oil until soft. Add marinated lentils and vegetable broth, then simmer until lentils are tender.
