Beef short ribs
4 short ribs — about 1.5 lbs
Salt
to taste
Black pepper
freshly ground, to taste

For the Braising Liquid

Argentine Malbec
2 cups
Beef stock
1 cup
Tomato paste
2 tbsp
Garlic
2 cloves — minced
Onion
1 — finely chopped
Dark chocolate
2 oz — at least 70% cocoa

For the Aromatics

Rosemary sprigs

Preparation


Marinating the Short Ribs

Season short ribs

Season the short ribs generously with salt and black pepper.

Rest to absorb seasoning

Let them sit at room temperature for about 30 minutes to absorb the seasoning.

Preparing the Braising Liquid

Heat oil

In a large Dutch oven, heat a splash of oil over medium-high heat.

Sear short ribs

Sear the short ribs on all sides until deeply browned. Transfer to a plate.

Do not skip searing the short ribs as it adds depth of flavor.

Cooking Process

Return short ribs to the pot and add Malbec, beef stock, tomato paste, and chocolate. Bring to a simmer.

Cover and transfer the pot to the oven. Braise for 3 hours.
