Preparation
Preparing the Vegetables
Melt Butter
Melt butter in a large pot over medium heat.
Sauté Onion & Carrots
Add chopped onion and sliced carrots, and sauté until the onion is translucent.
Add Stock & Potatoes
Pour in the fish stock and water, then add the cubed potatoes.
For richer flavors, use chicken stock instead of water.
Preparing the Salmon
Trim & Cube Salmon
Trim and cube the salmon fillets.
Season Salmon
Season the salmon cubes with salt and white pepper.
Set Aside
Set aside as the broth simmers.
Do not over-stir the soup during cooking to keep the potatoes intact.
Cooking Process
Simmer the Base
Once the vegetables are added, bring the mixture to a simmer for 15 minutes or until potatoes are tender.
Add the Salmon
Gently add the seasoned salmon cubes to the pot and cook for an additional 5 minutes.
Finish with Cream
Stir in heavy cream, lemon juice, and fresh dill. Let it heat through but avoid boiling after adding cream.
