Preparation
Marinating the Pork
Combine Marinade
In a medium bowl, combine soy sauce, rice wine, and cornstarch.
Freezing the pork slightly before slicing yields cleaner cuts.
Coat the Pork
Add the sliced pork, tossing to coat evenly.
Rest the Pork
Let marinate for at least 15 minutes in the refrigerator.
Do not over-marinate the pork, as extended soaking in soy sauce can make it overly salty.
Preparing the Cucumber
Slice Cucumbers
Slice the cucumbers into half-moons.
Use fresh, firm cucumbers for the best crunch and flavor.
Dry Cucumbers
Pat the slices dry with a paper towel.
Set Aside
Set aside for stir frying.
Cooking Process
Stir Fry the Pork
Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Stir fry the marinated pork until lightly browned and cooked through, about 3-4 minutes. Remove from the wok and set aside.
Sauté Aromatics
In the same wok, add the remaining tablespoon of vegetable oil. Lower the heat to medium, then add garlic and ginger, stirring until fragrant, about 1 minute.
Combine Everything
Increase the heat to high. Add the cucumbers and cooked pork back into the wok. Add soy sauce, sesame oil, hoisin sauce, and black pepper. Stir fry everything together for about 2 minutes until well combined.
