Preparation
Marinating the Beef
Marinate
In a bowl, combine beef, olive oil, cumin, paprika, minced garlic, salt, and pepper.
Coat Evenly
Stir well to coat the beef evenly.
Chill
Cover and let marinate in the fridge for at least 30 minutes.
Preparing the Vegetables
Heat Oil
Heat vegetable oil in a large pot over medium heat.
Sauté Aromatics
Add onion and garlic; sauté until the onion is translucent.
Do not overcook the vegetables while sautéing.
Add Vegetables
Add the diced pumpkin, potatoes, corn, and red bell pepper.

Cooking Process
Browning the Beef
Sear the marinated beef in the pot until browned on all sides, then remove and set aside.
Combining Ingredients
Add the browned beef back into the pot with the vegetables. Stir in broth and bay leaf.
